3 Ingredient Almond Butter Cookies
If you’re into limited ingredient recipes – and healthy ones at that - we’ve got a delicious recipe that only uses 3 ingredients - (almond butter, raw sugar and an egg).
This is a terrfic way to incorporate almond butter inot a sweet treat that also packs a nutrient-rich punch of antioxidants and vitamin E! And since they use NO FLOUR - they are also gluten free for your GF BFFs! They don’t require the use of a mixer which also makes them kid-fiendly too. Win-Win-Win!
1 cup Simply Nicki’s Maple Almond Butter
6 tbsp sugar (raw is preferred- but you can use another. We like Monk sugar too.)
1 large egg, lightly beaten
Cooking spray or cooking oil for greasing cookie sheet
Preheat oven to 350°F and place the racks in the upper and lower third. Lightly grease or spray two nonstick baking sheets with cooking spray - or wipe with a tablespoon of cooking oil.
In a medium bowl, mix the almond butter, sugar and egg. Combine well. Place 1 level tablespoon of the mixture about 1 inch apart onto baking sheets - using a spoon - or rolling into a ball in your hands.
Flatten the rounded mounds with a fork, creating a crosshatch pattern on the tops of each cookie.
Bake until edges are a golden brown, about 10 minutes, rotating the position of the sheets halfway through the bake.
Let cool completely before removing from the cookie sheet.
